Kale, Black Bean, Vegetable Quinoa Bowl

I love quinoa bowls because they can be packed with a ton of nutrients, come in many different variations, and always satisfying. This bowl has got a little bit of everything from vegetables to sauce. Not hard to make and can easily be changed up with different ingredients!


What you will need:

  • 2 kale leaves, torn off stem and massaged

  • 1/3 cup black beans

  • 1/3 cup quinoa (or make more and save for later)

  • 1/4 onion, sliced

  • 1/2 zucchini

  • 1 tbsp olive oil

  • Sprinkle of chili powder

  • Sprinkle of paprika

  • Sprinkle of cumin

  • Garlic salt and pepper for seasoning

  • "Chipotle Sauce"

  • Avocado

3 Easy Steps:

  1. Bring a pot of water to boil with salt, put in quinoa and allow to cook for 25-30 minutes.

  2. Heat up pan on medium heat, add onions. Allow to simmer for 3 minutes, add kale and let sauté for 2 minutes. Add zucchini and seasonings, mix around for 3 minutes. Add black beans and continue to combine, add some more salt and pepper. Add cooked quinoa and fully incorporate ingredients

  3. Throw on some chipotle sauce and avocado.
