Breakfast salad pt. 2

You can really add ANYTHING to a salad, especially a breakfast salad. This one was a warm breakfast salad full of a mix of raw and sautéed veggies. Play around & find which way resonates with you most!


The prep:

  1. Saute your veggies in a pan with olive oil. Option to bake sweet potato or cook it over the stovetop.

  2. In a pot, poach your egg by adding a dash of ACV to the pot and stirring quickly to wrap the egg white around the yolk.

  3. Assemble your raw veggies in a bowl, top it off with the cooked veggies, poached egg and sprinkle any seasonings.

The goods:

  • apple cider vinegar

  • olive oil

  • arugula

  • sweet potato

  • tomatoes

  • microgreens

  • purple cabbage

  • mushroom

  • onion

  • egg

  • feta

  • Salt and pepper

  • Optional: mustard
