20-Minute Miso Salmon and Veggies

This 20 minute salmon is super quick and easy. The miso brings out the umami flavors and makes the veggies delicious and creamy. Simple and easy way to eat a healthy and yummy dinner!

Serves 3-4

The prep:

  1. Heat the oven to 375F. Create miso glaze: melted butter, miso paste, garlic, salt and pepper. Lather salmon with about half of the glaze and let marinate for at least 20 minutes. Bake salmon for about 20 minutes.

  2. For softer cauliflower, steam the cauliflower in water first for about 5 minutes. Remove from pan and add olive oil, saute onions for 5 minutes. Add mushrooms, continue to cook until mushrooms begin to brown, season with salt and pepper.

  3. Add cauliflower and asparagus. Pour in remaining miso glaze, continue to cook. Add more miso paste + water to create more miso sauce. Cover the pan and let the veggies steam for a few minutes.

  4. Once veggies are soft and cooked, add cornstarch. Continue to cook until the miso sauce becomes thicker

  5. Plate the veggies and finish with the salmon on top

The goods:

  • 1 lbs salmon

  • 3 tbsp butter

  • 1 tsp garlic

  • Salt, pepper

  • 3 tbsp miso paste + more for veggies

  • Mushrooms

  • Cauliflower

  • Onion

  • Asparagus

  • optional: cornstarch
