Grilled Swordfish with Balsamic Roasted Vegetables
Father/daughter cooking day! My dad grilled this swordfish and I made the vegetables. I used the balsamic glaze recipe from my roasted veggie post awhile backk, and it was as good as ever!
It is amazing how adding a simple glaze can make a meal so much more exciting! I am not completely sure how my dad made prepared the swordfish but I will provide a general recipe for it below as well as my vegetables! If you are looking for place to buy reliable and fair priced fish, Costco is a great option! My dad is definitely picky about where he buys his animal protein from, but Costco is his go to for sure.. who doesn’t love Costco anyway??
Serves 3
4 Easy Steps:
Marinate your fish for 10-30 minutes. Cook fish on grill for 10-15 minutes, flipping halfway between each side.
Heat oven to 400F, coat vegetables with olive oil and salt. Roast veggies for about 40 minutes.

Coat your vegetables once fully cooked with glaze and enjoy!

Swordfish
Soy sauce
2 summer squash zucchini
1 head broccoli
1/2 onion (I used yellow)
Glaze
1/4 cup balsamic
1/3 cup vegetable broth
1/4 cup olive oil
1/2 tbsp dijon mustard
1 tsp lemon juice
2 tbsp honey
