Black Bean Fajita Bowl

Such a simple, easy and clean dish to make. This dish has a little bit of everything - your grain and lettuce base, cooked veggies in the middle and topped off with some cheese and guac, it is delicious!

KEY: top put the cheese on top of the veggies while they are still warm so it melts on top!

The prep:

  1. In a pot cook rice as directed on packaging.

  2. In a large pan, place a little bit of water and place the chopped sweet potato in the pan. Place the lid on top and steam for about 5 minutes (other option is to bake the sweet potato first before sautéing).

  3. Remove sweet potato from pan and add olive oil and onion. Saute for 3 minutes and then add zucchini. Continue to cook, add seasoning.

  4. Add sweet potato and black beans. Continue to cook and coat with seasoning.

  5. While veggies are cooking, make your guac: combine avocado, diced red onion, lemon juice, salt and pepper in a bowl.

  6. Build your bowl - place rice and arugula into dish, add cooked veggies on top, then cheese and finish with guac. Enjoy!

  7. Option to bake tortilla in the oven as a side

The goods:

  • Zucchini

  • Onion

  • Black beans

  • Sweet potato

  • Rice

  • Arugula

  • Cheese

  • guac: avocado, lemon, red onion

  • Seasoning: dash of salt, pepper, chipotle, smoke paprika, cumin

  • Optional: tortilla cut up into small pieces to make chips
