Halibut with Caramelized Onion and Juicy Tomatoes
This dish will leave you wanting more. The fresh halibut that is topped with caramelized onions and juicy tomatoes is incredibly addicting. Over a bed of lettuce and a side of tzatziki adds an amazing texture crunch and variety.
This is my go-to dish of the summer and is perfect for every phase you are in during your menstrual cycle - you can never go wrong with this dish!
Serves 1
The prep:
Prep fish: turn oven to 400F. In a pan add fish, 1 tbsp olive oil, 1/2 lemon, salt and pepper. Sit for 15-20 minutes, then cook for 15-20 minutes, finish with broil for 1-2 minutes.
Tomato + Onions: heat a pan over medium-low heat. Add 2 tbsp olive oil and onions. Slowly sauté for about 10 minutes - we are going for caramelization so slow cooking is key. Add tomatoes and continue to cook on low. Season with salt and pepper. Cook until fish is done or for as long as possible - the longer on lower heat, the juicier.
Plate your fish and add caramelized tomato and onion mixture on top
The goods:
Olive oil
5oz halibut (or other white fish)
Handful (5-10) cherry tomatoes, halved
1/2 yellow onion, thinly sliced
1 clove garlic, minced
1/2 lemon, juice
Salt and pepper to season
Optional: bed of lettuce, side of grain
