Vegan Lentil Curry

The perfect meal for a rainy night - high in protein, full of veggies and spices that make you feel nourished and cozy. Can be served alone or with a side of grain of choice.

Serves 3-4

The prep:

  1. In a large pan, add onion and let cook for a few minutes. Next add carrots and celery, season with salt and pepper. Add garlic, broccoli and sweet potato. Continue to cook for about 5 minutes.

  2. Add curry powder blend over veggies and saute. Add lentils, water and coconut milk. Season with more salt and pepper. 

  3. Coat veggies and lentils with liquid mixture and cover with lid to steam for about 7-10 minutes (until sweet potato is soft). Remove lid and continue to cook until lentils are soft, 35-40 minutes total.

  4. Eat alone or serve over rice and enjoy!

The goods:

  • 1/2 onion, sliced

  • 5 large carrots, sliced

  • 1 sweet potato, chopped

  • 1 head broccoli, florets

  • 4 stalks celery, sliced

  • 2 cloves garlic, minced

  • 1 cup lentils

  • Curry powder blend (or buy one at the store):

    • 1/2 tsp turmeric

    • 1/2 tsp ginger

    • 1/8 tsp cumin

    • Dash of mustard seed powder (increases nutrients)

  • 1 cup coconut milk/or cream

  • 4-6 cups of water (depends on how saucy you want)

  • 1 tsp salt

  • 1/2 tsp pepper for seasoning
