Pumpkin Protein Bread 〰️

It all begins with an idea.

This bread is FULL of protein - and is super tasty!

Whether you want to eat this as a snack, breakfast or sweet treat - I promise it will satisfy you completely. This bread is GF, oil free and refined sugar free — crazy, I know.

The goods:

  • 1/3 cup pumpkin puree

  • 1/3 cup cottage cheese

  • 1/4 cup maple syrup

  • 1 tbsp coconut sugar

  • 1 tsp vanilla

  • 3 tsp cinnamon

  • 1/2 tsp pumpkin spice

  • 1/2 tsp baking soda

  • 1 tsp baking powder

  • 1 1/4 cup oat flour (or 2 cups fo almond flour)

  • Choco chips

  • Dash of salt

The prep:

  1. Heat oven to 350F, in a large bowl add pumpkin, cottage cheese, maple syrup, vanilla and coconut sugar. Stir - add cinnamon and pumpkin spice. Stir.

  2. Add baking soda/powder, oat flour and a dash of salt. Stir. Choco chips last plus extra on top!

  3. Bake in oven for roughly 45-50 mins - enjoy!
