Juicy Tomato Salad Over a Bed of Butter Lettuce

Calling all tomato lovers!! Go grab your juiciest tomatoes and make this salad. Super light and refreshing salad with minimal ingredients, topped off with a simple lemon dressing. It is so easy, so simple, and so delicious this salad will become part of your weekly ritual. The butter lettuce mixed with the beans and avocado basically melt in your mouth, while the tomatoes add a sweet crunch, followed by a salty bite of feta and olives. I chose cannelloni beans because they are a softer bean, but you can add any protein you would like! This salad hits the spot when you are in need of a light but filling main dish or can be made as a side, and it is also bright and colorful! 

Serves 3-4 people


2 Easy Steps:

  1. Heat up a pan over medium heat and add olive oil. Place beans in pan, add garlic salt and pepper. Cook for about 5 minutes or until beans are warm and begin to soften to the point where you can press them.

  2. Wash all of your vegetables and assemble your bowl. Finish with salad dressing, salt and pepper.

What you will need:

  • 2 tsp Olive Oil

  • Garlic Salt

  • 1 head butter lettuce

  • 5 tomatoes from the vine, quartered

  • Avocado

  • 1/2 cup cannelloni beans

  • Olives

  • Feta Cheese

  • Salt and Pepper for seasoning

Dressing:

  • 1/2 lemon, juiced

  • 1 tbsp olive oil

  • Salt
