Vegetable, Bean and Kale Soup
I love this soup recipe because it is extremely adaptable. This is a great soup if you are looking for an easy way to eat a lot of veggies and protein. I made a lot because I wanted to have leftovers so beware of ingredient amounts if you want smaller portion. This soup is satisfying, really healthy and delicious! Add a side of toasted bread on the side to soak up the yummy broth.

If you are using dried beans, you can either soak them the night before to expedite the cooking process, or rinse them before starting to cook and let soak in water until use
Heat up pot with 2 tbsp olive oil. Add onions and let sauté for 5 minutes. Add garlic and mix for 3 minutes or until onions begin to become translucent. Add salt and pepper.
Add carrots and celery, mix for 5 minutes. Add broccoli and cauliflower. Continue to sauté, let vegetables soften, adding some more olive oil if you need. Add more salt, thyme, rosemary, oregano. Stir every few minutes. Add tomatoes to pot, continue to mix. Add tomato puree, turn up the heat and mix around to allow sauce to be absorbed by vegetables. Add beans, more pepper and any other seasonings.
Once sauce is bubbling add the vegetable broth. Bring to a boil and then let simmer, add bay leaf. Let simmer with the top on for at least 45-60 minutes (longer if you use dried beans), add kale in last 15 minutes.
Top off with some fresh parsley and some bread!
3 cups beans (I use dried kidney)
60oz vegetable broth (I made with leftover veggie scraps)
1 small head broccoli, cut to small/medium pieces
1 small head cauliflower, cut to small/medium pieces
5 carrots, sliced
5 stocks celery, thinly sliced
3 heads kale, removed from stem
10 tomatoes (I used a mix of cherry and vine), halved or quartered
14.5oz can tomato puree
1 yellow onion, diced
3 garlic cloves, minced
Olive oil
Salt and pepper
5 sprigs lemon thyme (or regular)
Couple dashes of dried rosemary
Couple dashes of dried oregano
Couple dashes of dried thyme
1 bay leaf
Fresh parsley
