Belly Restore Soup

It is cozy season which means soup!! I love soup because it is such an EASY and AMAZING way to get soooo many vitamins and nutrients in. If you are someone who loves or hates vegetables — soup is definitely your answer. 

I named this Belly Restore Soup because it has ginger, apple cider vinegar and lemon which are all ingredients that do so much for your belly and gut. 

FUN FACT: Mustard see powder — I recently learned that mustard seed powder combined with any form of broccoli increases the amount of sulpherphane present in the vegetable

So what is sulpherphane? And why is this a fun fact?

Sulpherphane = a powerful phytochemical which helps fight chronic disease in the body —> mainly cancer

  • Some more benefits: helps regulate hormones, reduces inflammation, strengthen immune systems

The prep:

  1. Chop all your ingredients. Add olive oil to a big pot and let heat before adding onions. Cook for 2-3 minutes before adding garlic. Continue to cook, add celery and carrots. Season with salt and pepper.

  2. Add ginger and let sauté for 2 minutes. Add broccoli and mustard seed powder. Season with more salt, pepper, and smoked paprika. Saute for another 5 minutes.

  3. Add chickpeas and broth. Add as much broth as needed to make it more or less soupy (more broth = more liquid/soup, less broth = thicker). Add apple cider vinegar, lemon and parsley.

  4. Bring liquid to a boil and then simmer and cover with lid. Cook for at least 30 minutes. The longer you cook, the more the flavors absorb.

The goods:

  • 2 tbsp chopped ginger

  • 2 garlic cloves, chopped

  • 1/2 yellow onion, sliced

  • 1 stalk celery, sliced

  • 3 large carrots, sliced

  • Yellow cabbage

  • 1 head broccoli

  • 2 tbsp ACV

  • 1/2 squeezed lemon

  • Parsley

  • Salt, pepper, smoked paprika

  • Mustard seed powder

  • 1 can Chickpeas

  • Vegetable broth
