Healthy Veggie Fried (cauliflower) Rice

This fried rice hits. Full of veggies and protein from the egg, you end up feeling full and satisfied. It is super healthy, a great way to change up your veggie routine, and is free of all dietary restrictions!

Serves 1

The prep:

  1. In a pan steam broccoli and cauliflower. Set vegetables aside and add oil to pan. Saute onions for 2 minutes before adding garlic. Cook on medium heat for 3-5 minutes before adding carrots. Season with salt and pepper.

  2. Add zucchini, cabbage, broccoli and cauliflower rice next. Pour soy sauce, sesame oil and ginger into pan. Continue to cook, add more salt and pepper as needed. Crack egg into pan and as it starts to cook incorporate it with vegetable rice mixture.

  3. Once egg has completely cooked, finish with green onions. Remove from pan and top with Nori seasoning and sesame seeds.

The goods:

  • 1 tbsp Olive oil or avocado oil

  • 1/2 Onion, sliced

  • 1 Garlic clove, diced

  • 1/2 head Broccoli

  • 2 Carrots, chopped

  • 1/2 Zucchini, sliced or quartered

  • 1/3 cup Cauliflower rice

  • 1/4 yellow cabbage, sliced

  • 1 egg

  • Green onion, sliced

  • 2 tsp Soy sauce

  • 1 tsp Sesame oil

  • 1/2 Ginger powder

  • Nori seasoning from Agni

  • Sesame seeds

  • Salt and pepper
