Banana Oat Bread
We goin bananazzzzzz out here for this bread!!! Banana bread with oats and chocolate chips - so sweet, so moist, so delicious.
This bread is mostly sweetened by the bananas (3 of them) - which is wayyy better for your body than putting in refined sugars
Why??? bc bananas also contain nutrients that allow your body to digest the sugars and metabolize them at a slower rate = less risk of spiking your blood sugar levels
Soooo this bread is tasty & mostly natural sugars. Go make it and tell me how it goes!
Ps - if I remake I will probs add more oats to get more of an oaty, chewy texture
The goods:
3 bananas (browner the better)
1 egg
1 tbsp maple syrup
1/3 cup brown sugar (or coconut)
1 tsp vanilla extract
1/3 cup butter, melted
1 1/2 cup flour
1/2 cup oats
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
Chocolate chips
The prep:
Heat oven to 350F. Mash your bananas in a bowl, add your egg (or flax egg), maple syrup, sugar vanilla and butter to a bowl. Combine.
In a small bowl, mix dry ingredients together.
Slowly start to incorporate the dry ingredients with the wet, gradually mixing in increments using a spatula or wooden spoon.
Finish with the chocolate chips. Pour the batter in a prepared (with parchment paper or butter/olive oil) baking dish. Bake for about 40 minutes, use a knife if unsure if baking is complete.
Note: better to undercook a little than overcook as the bread continues to bake once removed from the oven!
