Berry Delicious Blueberry Muffins
I love blueberry muffins, and personally think that they are often neglected when it comes to baking from scratch. These blueberry muffins are so good! These muffins pair great with your morning coffee, a late afternoon snack or dessert with some ice cream.
8 Easy Steps:
Preheat oven to 400°F
Cream butter and sugar until light
Add eggs, one at a time, mixing well after each addition. Add vanilla
Combine flour, salt and baking powder. Add to sugar mixture, alternating with milk until fully combined
Crush 1/2 cup blueberries and add other half to batter. Fold in berries. Butter 12 muffin tins and fill with batter.
Place topping ingredients in a bowl, and using your hands squish all ingredients together until a crumble has formed (should be butter pieces covered with oats, flour, cinnamon and sugar)
Place topping over muffins and sprinkle a tiny bit of extra sugar on top
Bake for 20-25 minutes, until edges start to turn golden and blueberries are oozing.

1 cup blueberries
2 cups flour
1/2 cup (1 stick) salted butter, softened
1 1/4 cup sugar
2 teaspoons baking powder
1/2 cup oat milk
1 tsp vanilla
2 eggs
Crumble Topping:
1/4 cup oats
1 tbsp sugar
1 tbsp flour
1 tsp cinnamon
3 tbsp butter
