Vegan Oatmeal BlueBerry Cookies*
So these cookies are basically good for you and also taste really good.. what more could you ask for?? I was wanting something sweet but was trying to be healthy so I went with a cookie filled with protein and fiber. You can eat for breakfast, lunch or as a dessert treat. Vegan, dairy, gluten and refined sugar free (besides choco chips).. doesn’t get much better than that. It also is a super easy clean up as you can combine all ingredients in one bowl. I baked these cookies, but you can also just stick them in the fridge after forming to solidify shape. The world is your oyster!
Makes about 14 cookies

2 Easy Steps:
Heat oven to 350F. In a large bowl, add bananas and mush down with a fork or potato masher. Add liquid ingredients first, followed by dry. Mix around before adding blueberries and chocolate chips.
Form into cookie shape and place on sheet pan (these cookies do not spread so make them how you would like to consume). Bake for about 7-10 minutes (or to whatever texture you desire). Let cool for a few minutes and enjoy! I stored my cookies in the fridge so they stayed fresh longer.
What you will need:
2 ripe bananas
2 cups 3 tbsp quick oats
2 heaping tbsp almond butter
1/4 cup walnuts
1/6 cup honey
1/3 cup pureed dates
1 tsp vanilla
1 tsp cinnamon
1/4 tsp salt
3/4 cup blueberries
1/4 cup cacao nibs
2 handfuls chocolate chips (optional)
