Ahi Tuna Poké Bowl
Light and refreshing salad bowl. I made the tuna poke, rice and cucumbers ahead of time but you can make all in one sitting. It just takes 20 minutes as opposed to 5 minutes. Toss any other toppings ya got on hand and you have yourself a high quality, easy to make meal!
What you will need:
1 pound tuna, cut into small size cubes
1 cucumber
Rice
Spinach
Sesame seeds
Avocado, sliced
Ahi Tuna Marinade:
1/4 cup soy sauce
1 tsp rice vinegar
1 1/2 tsp sesame oil
1 tsp wasabi paste
1 tsp ginger, grated
Pickled Cucumbers:
1/4 cup rice vinegar
1 tbsp (or more) sesame seeds
sprinkle of sugar
2 tbsp soy sauce
1 tsp sesame oil
3 Easy Steps:
To make marinade: combine ingredients in a bowl and allow tuna to marinate for 10-15 minutes
To pickle cucumbers: whisk all ingredients together in a bowl and allow cucumbers to sit for at least 10 minutes (make extra and you can have lots of pickled cucumbers on hand)
To build your bowl: lay a bed of spinach down first, add some rice, tuna, and avocado. Sprinkle sesame seeds and any other toppings you have (seaweed, green onion, pickled ginger)
