Ahi Tuna Poké Bowl

Light and refreshing salad bowl. I made the tuna poke, rice and cucumbers ahead of time but you can make all in one sitting. It just takes 20 minutes as opposed to 5 minutes. Toss any other toppings ya got on hand and you have yourself a high quality, easy to make meal!


What you will need:

  • 1 pound tuna, cut into small size cubes  

  • 1 cucumber  

  • Rice  

  • Spinach 

  • Sesame seeds

  • Avocado, sliced  

Ahi Tuna Marinade:

  • 1/4 cup soy sauce 

  • 1 tsp rice vinegar

  • 1 1/2 tsp sesame oil

  • 1 tsp wasabi paste

  • 1 tsp ginger, grated 

Pickled Cucumbers:

  • 1/4 cup rice vinegar

  • 1 tbsp (or more) sesame seeds

  • sprinkle of sugar

  • 2 tbsp soy sauce

  • 1 tsp sesame oil

3 Easy Steps:

  1. To make marinade: combine ingredients in a bowl and allow tuna to marinate for 10-15 minutes

  2. To pickle cucumbers: whisk all ingredients together in a bowl and allow cucumbers to sit for at least 10 minutes (make extra and you can have lots of pickled cucumbers on hand)

  3. To build your bowl: lay a bed of spinach down first, add some rice, tuna, and avocado. Sprinkle sesame seeds and any other toppings you have (seaweed, green onion, pickled ginger)
