Vegetarian "Tuna" (chickpea) Salad*

If you know me at all, you know that I am a huge tuna gal. I decided to give the vegetarian version of tuna a try and I will say.. It did not disappoint! I could even go further to say that it may be as good as regular tuna?? I don’t know, but it was deeelish and hit the spot. Whether you are vegetarian or not I definitely recommend you try this recipe out.

2 Easy Steps:

  1. Drain and rinse the chickpeas. Mash them up in a bowl with a fork or potato masher. 

  2. Add all other ingredients and continue to mash until a tuna-like texture forms. I left some garbanzo pieces more whole for varying texture.

What you will need:

  • 1 can chickpea/garbanzo beans, drained and rinsed

  • 2 tbsp mayo

  • 1 tsp dijon mustard

  • 1 tsp apple cider vinegar

  • 1 tsp parsley, chopped

  • 1/2 lemon, juiced

  • 1/4 red onion, minced

  • Salt and pepper to taste
