The prep:

  1. Heat oven to 350F. Heat olive oil in a large skillet over medium heat.

  2. Add onion and red bell pepper, sauté until soft, about 5 minutes.

  3. Stir in minced garlic, ground cumin, smoked paprika, and chili powder. Cook for another minute until fragrant.

  4. Pour in the can of tomatoes with their juices, smoosh down full tomatoes. Season with salt and pepper.

  5. Simmer the tomato mixture for about 10-15 minutes until it has slightly thickened.

  6. Using a spoon, create small wells in the tomato mixture for the eggs.

  7. Crack an egg into each well. Season the eggs with salt and pepper.

  8. Place the skillet in the oven and let the eggs cook in the tomato mixture for about 5-7 minutes, or until the egg whites are set but the yolks are still runny (cook longer for solid yolk).

  9. Once the eggs are cooked to your liking, garnish with chopped parsley or cilantro.

  10. Serve the shakshuka hot with crusty bread or pita for dipping.
