Veggie Frittata

Such an easy way to prepare a breakfast for a group of people or meal prep for the week!

Best part is you can make a frittata so many ways and never get bored! Here is one recipe that can be modified easily by switching out ingredients. At the end of the day, the process is basically always the same!

Serves 10-12

The prep:

  1. Whisk eggs in a bowl, add some salt and pepper and set aside. Preheat oven to 350F. In a large skillet add olive oil or butter to pan, followed by onions. Allow onions to caramelize for a few minutes, and once soft and mushrooms.

  2. While mushrooms are cooking, in a separate pan, steam broccoli. Add a bit of water to a pan with the broccoli, cover with a lid and let it steam for 5 minutes.

  3. Once mushrooms are cooked, add your broccoli. Season with salt and pepper and mix all of the veggies around. Pour whisked eggs into the pan and move the pan as needed to ensure all of the veggie components are covered by egg.

  4. Sprinkle in some cheese if adding and finish with spinach.

  5. Bake for 15-20 minutes before serving and enjoy!

The goods:

  • 10-12 eggs

  • 3 tbsp olive oil or butter

  • 1 broccoli bunch, cut into florets

  • 1/2 yellow onion, sliced

  • 4-8oz mushrooms (crimini, white, shiitake)

  • 1-2 cups of spinach

  • Salt and pepper to season

  • Optional: 1/3 cup cheese (feta, cheddar, mozzarella)
