Kitchen Sink Cookies
I am super excited about these cookies! I fully winged it and came up with this healthy, completely guilt free cookie concoction. All sugar comes from fruits (besides the chocolate chips) and they are really tasty. The cacao nibs add a crunch and is a nice blend with the chocolate chips (they are really good for you too!) If you are the kind of person that likes soft, moist cookies, you will love these. The date and banana combo give it a more “cakey” texture as opposed to a dense, crisp cookie. I made these cookies about a week ago and have been storing them in the refrigerator, which I would recommend since it is mostly made from fruits. They still taste completely fresh and are great straight out of the fridge or heated up! Definitely going to play around with the recipe more but really happy with these results and hope you have success with them too!!
Made approx. 18 cookies
5 Easy Steps:
Heat the oven to 350°F
Make date paste (if not already made), and put in bowl. Add apple sauce, banana and vanilla. Combine ingredients with hand mixer until smooth. Add egg. Mix until incorporated.
Combine dry ingredients and begin to mix dry ingredients with wet, adding and mixing in increments.
Once ingredients have fully combined add chocolate chips, cacao nibs and walnuts (I did half batter with walnuts and half without).
Refrigerate for a bit to harden up the mixture. Bake for about 12-15 mins. Let sit for 5-10 minutes before enjoying!
