Healthy Walnut Banana Bread
Another healthy banana bread for the world! I made it in a circular cake pan because I was using my bread loaf pan for something else. This changed the cooking time and I slightly overbooked them, but they are still pretty moist. This bread is healthy on the spectrum of banana breads and honestly could be sweeter. I only put chocolate chips on the top, but I think that if I had mixed them in it would be perfect sweetness. I will say you can easily eat a lot of this bread due to its lack of sweetness, but at least it isn’t super unhealthy! I would recommend adding some more sweetener if you use this recipe!
5 Easy Steps:
Heat the oven to 375°F
Melt the butter, and add vanilla, brown sugar, vanilla and mix until fully combined. Add eggs, beating between each one.
Add bananas and mash them in mixture with a fork. Mash the bananas until they are small chunks (I like having different size chunks to add texture to the bread, and have some banana chunks once the bread is baked)
In a separate bowl, combine flour, baking soda, cinnamon. (and salt if you don’t use salted butter). Add wet ingredients to dry bowl and mix. Only mix until all your ingredients are fully incorporated. Add walnuts, chocolate chips or whatever else you want!
Butter the dish and add mixture. Top off with a little more cinnamon, chocolate chips and walnuts. The timing for baking is rough because depends on what dish you use but check after 45 minutes and continue from there.
What you will need:
4 bananas
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp cinnamon
2 tsp vanilla extract
1/3 cup brown sugar (or you can use some other type of sweetener.. probably add some more for more sweetness)
5 tbsp salted butter, melted
2 eggs
Walnuts, chopped
Chocolate chips
