Sheet Pan Honey Lemon Salmon with Veggies
Enjoy this easy, quick, and healthy salmon dish that bursts with flavor! Perfect for a weeknight dinner when you're short on time but still want something nutritious and satisfying.

The prep:
Line a baking dish with parchment paper or aluminum foil.
Marinate your salmon in a pan: pour olive oil over salmon, squeeze lemon juice (and slice lemons to go on top), sprinkle garlic, honey and salt and pepper over top. Let sit in the fridge for about 20 minutes and heat oven to 400F.
Prepare your veggies in same baking sheet: add olive oil and onions, garlic, zucchini and cauliflower rice.
Bake for about 15-20 minutes and then finish in the broiler for 1-2 minutes (don’t over cook it).
Plate all your food on a dish and enjoy!
