Salmon with Caramelized Onions & Juicy Tomatoes over Spaghetti Squash
This dish is incredibly satisfying while also being low calorie and nutrient dense. The combo of caramelized onions and tomatoes creates an irresistible sauce that mixes beautifully with the spaghetti squash. This will be your new fav way to make salmon!
Serves 4
The prep:
Heat oven to 400 and prepare spaghetti squash. Slice spaghetti squash long-wise in half and lather with 2 tbsp olive oil, salt and pepper. Place on sheet pan sliced side facing down. Cook in oven until the bottom begins to brown and the squash is soft to the touch, roughly 40 minutes. Fork out inside of spaghetti squash.
Marinate salmon with 2-3 tbsp olive oil, lemon juice plus lemon slices, salt and pepper. Let sit for at least 20-30 minutes. Bake in oven for about 20 minutes.
While fish is baking, make your tomato and onion sauce. Add 5 tbsp of olive oil to a pan over medium-low heat. Add onions and cook until they start to turn translucent. Add garlic and tomatoes. Season with salt and pepper and cook on low heat, you want the tomatoes soft and juicy (press down on them to get the juices out more), and onions are caramelized.
Plate your ingredients: spaghetti squash, salmon and finish with juicy sauce. Enjoy!

Salmon & Tomato Sauce:
20-24oz of salmon
7 tbsp olive oil
2-3 lemons
1 large yellow onion, sliced
4 cloves garlic, minced
1 box of tomatoes (cherry, mini heirloom)
Salt & pepper
Spaghetti squash:
1 large spaghetti squash
2 tbsp olive oil
1 tsp salt
1/2 tsp pepper
