A Little Bit of Everything Salad with Lemon Vinaigrette
Mmm mmm mmm I really love big salads. I had most of these ingredients already prepared from another meal so this didn’t take long to put together. I will list how I prepared the ingredients below. Easy, delicious and so satisfying!
Serves 1
4 Easy Steps:
Turn oven on to 350F. Slice zucchini lengthwise into quarters. Drizzle olive oil, garlic salt and pepper over zucchini and bake until softened. About 20 minutes.
To prepare cauliflower rice, sauté with olive oil over pan for 5-10 minutes.
Add dressing ingredients into a bowl and whisk until combined.
Place salad ingredients in a bowl and pour dressing on top. Add salt and pepper for flavor.
What you will need:
2-3 cups of arugula
1/2 zucchini, baked or sautéed
1/3 cup black beans
1/4 cup cauliflower rice
5 baby heirloom tomatoes
1/4 avocado
2 tbsp hummus
Feta
Dressing:
1/2 lemon, juiced
1/4 tsp garlic
1 tsp mustard
2 tsp olive oil
