Spring Green Salad

YUUMM this salad hits and is different from most of my go to salads. We had some random ingredients that were about to go bad so I threw this salad together. It is incredibly light and tasty. Really hit the spot as a side dish with some fish


3 Easy Steps:

  1. Heat up large pan with olive oil. Add garlic until begins to brown. Add asparagus, allow cook for 3 minutes. Squeeze lemon juice over vegetables. Then add chives, let cook for another 5-10 minutes, until softened.

  2. Slice head of lettuce into half width wise, place in bowl. Add cooked asparagus and chives, cucumbers, salt and pepper. Squeeze more lemon juice. Add breadcrumbs

  3. Whisk dressing together and pour over top of salad

What you will need:

  • 5 asparagus sticks, chopped into fourths

  • 1 garlic clove, diced

  • 2 tbsp olive oil

  • 1-2 chives, sliced

  • 1/2 lemon, juiced

  • Cheesy breadcrumbs

  • 1 head red lettuce

  • 1/4 cucumber

  • Salt and pepper

Dressing:

  • 1/2 lemon  

  • 3 tbsp olive oil

  • Salt
