Spring Spinach and Kale Salad with Pesto Vinaigrette

This salad is so green and pretty and most importantly, tasty. Super quick and easy to make, other then the dressing which I made ahead of time! 


3 Easy Steps:

  1. To make pesto dressing place all ingredients in a food processor or blender and pulse until fully combined

  2. Massage kale in bowl for a couple of minutes, then add spinach

  3. Prepare all other ingredients and add to bowl. Top off with dressing, mix and enjoy.

What you will need:

  • 1/4 avocado

  • 3 stems kale, leaves picked from stem  

  • 1-2 handfuls of spinach

  • 1/4 cup white beans

  • 1/3 cucumber, quartered chunks  

  • Cherry tomatoes, halved  

  • Cheese if you want (I used mozzarella)  

  • Salt and pepper for seasoning

Pesto Dressing:

  • 1/2 bunch basil

  • 5 sprigs parsley

  • 1/2 lemon juice 

  • 1 tsp dijon mustard

  • 1 tsp mayo

  • 1 tsp honey

  • 1/3 cup olive oil

  • salt

  • 1 tsp red wine vinegar
