Chipotle Rainbow Quinoa Black Bean Bowl
Your healthy spinoff of a Mexican salad bowl from Chipotle! This bowl can be consumed raw or cooked - both would hit the spot. For a hardier dish serve with quinoa, and for a lower-calorie dish serve without. Many variations can be made to this bowl to fit whatever your cravings are, but use this as a baseline!

The goods:
quinoa and/or lettuce
Avocado oil
Yellow onion
black beans
chard
purple cabbage
carrots
green beans
tomatoes
seasoning: chipotle, smoked paprika, cumin, s&p
guac: avocado, red onion, lemon
chipotle dressing: olive oil, apple cider vinegar, honey, chipotle seasoning
Optional: cheese
The prep:
Cook quinoa as directed on packaging. Sauté veggies: onion, carrots, cabbage and chard. Season with salt, pepper, smoked paprika, cumin and chipotle. Add black beans last.
Make chipotle dressing by combining all ingredients in a small glass and shake until fully combined
Once everything is cooked, place in bowl. Top off with tomatoes, guacamole and chipotle dressing
