Creamy Vegan Caesar Salad with Homemade Croutons

Who said caesar salad needed to be unhealthy? This vegan caesar is sooo tasty and you would never know that it is vegan!

Making the homemade croutons is KEY to this dish. It is so simple and makes the dish 10x better! You’ll never going back to store bought croutons again!


The prep:

  1. Heat oven to 375F and cut/tear bread into small pieces. Lather with olive oil, salt, pepper, garlic powder and place on sheet pan. Let bake for 20ish minutes or until toasted to your desire

  2. For the dressing: combine all ingredients in a cup and stir until fully combined.

  3. Compile salad ingredients in a mixing bowl and pour salad dressing on top. Mix until lettuce is lathered with the dressing. Option to finish with parmesan cheese.

The goods:

  • Sourdough for croutons

  • Salt, pepper, garlic powder

  • Romaine

  • Red onion

  • Optional: parm cheese

  • Dressing:

    • 1 Lemon

    • 3 tbsp Olive oil

    • Dash of Salt

    • Dash of Pepper

    • 1 tsp Mustard

    • Optional: 2 tsp Hummus or tahini (not necessary but adds to creaminess)

    • 1 tsp Soy sauce or coconut aminos

    • 1 tbsp Capers or caper juice or pickled red onion juice (basically anything pickled)

    • 1 tbsp Nutritional yeast (or parm cheese if you don’t need to be vegan)
