Decadent Garden Salad

Garden salads are nice because they are simple, but have a little bit of everything when you are looking to get a good mix of vegetables. I also added leftover cheesy breadcrumbs that I had saved from the creamy cauliflower pasta I had made. I like to think of this one as a next addition garden salad with some more ingredients that make the salad a bit more exciting.

Serves 3-4 people


2 Easy Steps:

  1. Tear pieces of kale from stem and massage for a couple of minutes. Add romaine, quinoa, tomatoes, carrots, cucumber and avocado

  2. Whisk dressing together and pour over salad and add cheesy breadcrumbs. Finish with salt and pepper and combine all ingredients 

What you will need:

  • 1/5 cucumber

  • 1/2 avocado

  • 1/3 cup quinoa

  • 7-10 cherry tomatoes

  • 5 stocks kale

  • 2 heads of romaine, sliced

  • 5 baby carrots, sliced lengthwise

  • Cheesy breadcrumbs 

  • Salt and pepper for flavor

Dressing:

  • 5 tbsp olive oil

  • 1 tbsp balsamic vinegar

  • 1 tbsp apple cider vinegar

  • 1/4 tsp garlic

  • 1 tsp dijon mustard 

  • Salt and pepper for flavor
