Roasted Balsamic Glaze Vegetables

Roasted veggies are always good, but what makes them even better is a balsamic glaze on top!! This is an easy recipe and easily can make your vegetable dish more exciting and desirable to eat.


What you will need:

6 Easy Steps:

  1. Turn on oven to 400°F

  2. Cut up all of your veggies. Make sure they are roughly the same size for equal cook time

  3. Season vegetables with olive oil, salt and pepper and mix in bowl to ensure evenly coated

  4. Spread vegetables and garlic evenly on sheet pan for 45 minutes, rotating halfway in between 

  5. For the glaze heat up saucepan and combine ingredients. Add salt and pepper for seasoning. Cook over low heat for roughly 10 minutes until glaze reduces by half and thickens 

  6. Serve and coat glaze over vegetables 

  • 2 small sweet potato

  • 1 onion (whatever type I used yellow, sliced)

  • 1/2 head of broccoli

  • 1/2 head cauliflower 

  • 2 cup brussel sprouts (trimmed, halved or quartered depending on size)

  • 8 oz fingerling potatoes (halved)

  • 2 full garlic cloves 

  • 1/4 cup olive oil

  • salt and pepper

Glaze:

  • 1/4 cup balsamic

  • 1/3 cup vegetable broth

  • 1/4 cup olive oil

  • 1/2 tbsp dijon mustard

  • 1 tsp lemon juice

  • 2 tbsp honey
