French Vegetable Medley
I was in the mood for a lot of vegetables but still wanted it to be a satisfying meal so I added some beans and butter (hence why I am calling it french) to make it more exciting. This dish makes as a great main course or side dish with some rice, whatever you want! It is also really pretty.
2 Easy Steps:
Heat a large pan over medium heat, add a little bit of water and broccoli. Cover and allow to steam for 1 minute or until water has be absorbed. Over medium-low heat add half the butter, onions and allow to cook for 3 minutes, stirring occasionally. Add garlic and continue to mix for about 1 minute.
Add brussel sprouts and remaining butter, continue to stir vegetables for 5 minutes. Add mushrooms and let simmer, mix occasionally. Add all the spices and squeeze of lemon juice. Add beans and tomatoes, continue to sauté vegetables until fully softened. Finish with some parsley.
What you will need:
1/2 head broccoli
1-2 cups brussel sprouts, halved or quartered
1 handful mushrooms, sliced
1/3 onion, sliced
1/2 cup white cannelloni beans
1 handful grape tomatoes, halved
1 head garlic, diced
1-2 tbsp butter
Parsley
Sprinkle of dried thyme
Sprinkle of dried oregano
Squeeze of lemon juice
Parsley
Salt and Pepper for seasoning
