Chipotle Rainbow Quinoa Black Bean Bowl

Your healthy spinoff of a Mexican salad bowl from Chipotle! This bowl can be consumed raw or cooked - both would hit the spot. For a hardier dish serve with quinoa, and for a lower-calorie dish serve without. Many variations can be made to this bowl to fit whatever your cravings are, but use this as a baseline!

Serves: 1

The goods:

  • quinoa and/or lettuce

  • Avocado oil

  • Yellow onion

  • black beans

  • chard

  • purple cabbage

  • carrots

  • green beans

  • tomatoes

  • seasoning: chipotle, smoked paprika, cumin, s&p

  • guac: avocado, red onion, lemon

  • chipotle dressing: olive oil, apple cider vinegar, honey, chipotle seasoning

  • Optional: cheese

The prep:

  1. Cook quinoa as directed on packaging. Sauté veggies: onion, carrots, cabbage and chard. Season with salt, pepper, smoked paprika, cumin and chipotle. Add black beans last.

  2. Make chipotle dressing by combining all ingredients in a small glass and shake until fully combined

  3. Once everything is cooked, place in bowl. Top off with tomatoes, guacamole and chipotle dressing
