Vitamin Rich Salad

When my body is craving greens and veggies, this is my go-to salad. It contains high quality grains, fats and vitamins. Quinoa contains a great deal of B12, is energizing for your body, and helps you stay full for longer. Spinach provides vitamins and protein, and avocado and olive oil are the healthy fats our bodies need. Topped off with some extra vegetables and cheese and it is a delicious combo. The lemon juice adds nice acidity which balances out the other components in the salad. If you are looking for a quick salad that is nourishing, satisfying and mostly raw, I would highly recommend this one. 


3 Easy Steps:

  1. Cook quinoa (you can make extras and save for later) in a pot with salted water for about 15-20 minutes.

  2. Heat up a pan with 2 tbsp water, broccoli and cover. Let steam for about 5 minutes. Add a tiny bit of olive oil, salt and pepper until seasoned and cooked, another 2 minutes

  3. Combine all ingredients in a bowl. Squeeze lemon juice over ingredients, drizzle olive oil and add salt and pepper for more flavor.

What you will need:

  • 1 handful spinach

  • 1 handful arugula

  • 1/4 cup quinoa

  • 1/4 avocado

  • 5 cherry tomatoes

  • 1/2 Persian cucumber

  • 1/4 cup broccoli

  • Feta cheese

  • 1/2 lemon, juiced

  • 1 tbsp olive oil

  • Salt and pepper
