Yogini Oatmeal Breakfast Bars

Cookies for breakfast? Guilt Free…Gluten Free… What more could you ask for?? These cookies are perfect for any hour of the day, loaded with protein, fiber and omega 3s. The almond butter, banana and chocolate create a delicious sweet flavor, while the oats and pecans add great texture. This soft and chewy cookie bar could replace your bowl of oatmeal (and taste much better). It will satisfy any sweet tooth craving and help provide you with the energy boost you need throughout the day!

Serves 13 cookies


The prep:

  1. Heat up oven to 375F

  2. In a large bowl, mash up bananas. Add all ingredients into bowl and combine with a wooden spoon.

  3. Allow dough to refrigerate for 5-10 minutes before placing on cookie sheets. Form cookies how you would want to eat them because they do not spread or change form once baked

  4. Bake for about 18 minutes or until cookie has taken shape. Allow to cool before eating (if you can wait) and enjoy!

The goods:

  • 2 bananas

  • 3 tbsp almond butter

  • 2 tbsp apple sauce

  • 1 tsp cinnamon

  • 1 tsp vanilla

  • 1/2 tsp salt

  • 2 tsp flax + chia ground blend vanilla maple flavor

  • 1/3 cup pecans

  • 2 tbsp cacao nibs

  • 2 c oats

  • 1 c almond flour

  • 1-2 cups mix chocolate chips (whatever you are feeling)

  • 1/2 tsp baking powder
