GF Banana, Oat, Almond Butter Chocolate Chip Muffins*

Wowowowwww these muffins are so good! Banana muffins with oats, almond butter and chocolate chips (duh). Gluten free, refined sugar free, dairy free and taste bomb. Great for anytime to eat but has a good amount of protein from the almond butter. It’s also a great post workout snack! Stays moist for several days or can be frozen.


What you will need:

  • 3 very ripe bananas 

  • 3/4 cup almond butter

  • 2 eggs 

  • 1/2 tbsp oat milk (or any non dairy milk)

  • 1 cup gluten free flour (I used King Arthur brand)

  • 1 tsp cinnamon (or more i eyeball it tbh)

  • 1/4 tsp salt

  • 1 tsp baking powder

  • 2 tsp vanilla

  • 1/4 cup oats

6 Easy Steps:

  1. Heat oven to 350F

  2. Mash up bananas in large bowl. Add eggs, almond butter, vanilla, milk and mix

  3. In smaller bowl mix flour, baking powder, oats, cinnamon and salt

  4. Slowly incorporate dry ingredients with wet and mix while combining bowls

  5. Add chocolate chips and mix, but don’t over mix!

  6. Divide batter into 12 muffin tins and bake for 20-25 mins
